Ingredients

  • 2 carrots - grated
  • 1 Tbs chili garlic paste -optional
  • 1 c seedless cucumber - thinly sliced
  • 2 Tbs fish sauce
  • ¼ c fresh basil - minced
  • ¼ c fresh mint - minced
  • Juice of 1 lime
  • 1 Tbs rice vinegar
  • Salt and pepper to taste
  • 8 oz cooked ready-to-eat shrimp - sliced in half horizontally
  • 1 Tbs sugar
  • 1 Tbs water

Instructions

  1. Place shrimp, cucumber, carrots, mint and basil in a medium bowl.Whisk together dressing in a small bowl then pour on top of the shrimp salad
  2. Toss well to combine
  3. Adjust for seasoning if needed.
