  • ¾ cup soft butter
  • 1 ¼ cup sifted flour
  • 2 teaspoons instant coffee powder
  • ¾ cup finely chopped macadamia nuts
  • ¼ teaspoon salt
  • ½ cup sugar
  • 1 cup Heath Toffee Bits
  • ½ teaspoon vanilla


  1. Preheat oven to 300 degrees
  2. Cream butter with sugar, coffee powder, salt and vanilla
  3. Sift the flour and add to the butter mixture
  4. Stir the flour into the mixture
  5. dd the toffee bits and blend into the dough
  6. Set aside the cookie batter.Chop the macadamia nuts and put them into a bowl
  7. Drop the cookie batter by the teaspoonful into the bowl of chopped macadamia nuts, and roll to coat the dough shaping it into a ball
  8. Place the balls of cookie dough on a cookie sheet.Flatten each ball of dough just a bit with the back of a spoon and add a sprinkle of sugar on the top of the flatten cookie dough
  9. In a preheated oven, bake the cookies slowly for about 20 to 25 minutes, just until the edges are very lightly browned
  10. Let them cool and serve cookies separately or with coffee ice cream in between two of the cookies.
