Ingredients

  • 2 c farro - cooked
  • 1 c cucumber - seeded and diced
  • 1 oz feta - crumbled
  • 3 Tbs fresh dill - minced
  • Zest and juice of 1 lemon
  • 5 jumbo kalamata olives - pits removed, minced
  • ΒΌ c scallions - diced
  • 1 c tomato - diced

Instructions

  1. Prepare farro according to package directions and set aside to cool.In a medium bowl, mix together all ingredients
  2. Add salt and pepper to taste although I didn't need any salt due to the olives and cheese.
