Ingredients

  • 3 T almonds, coarsely chopped
  • 2 T dried apricots, diced
  • 1 avocado, pitted and cut into chunks
  • 3 cups cooked quinoa
  • 1 1/2 T currants
  • 3 T extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1 lemon
  • 1 1/2 T raisins
  • 2 scallions, sliced
  • 1/2 tsp sea salt
  • 1/4 tsp sweet paprika

Instructions

  1. Soak raisins, currants and apricots in hot water for five minutes
  2. Drain.Grate the zest of the lemon and squeeze the juice into a small bowl
  3. Whisk with olive oil, coriander, cumin, paprika, garlic and salt.Toss cooked quinoa with raisins, currants and apricots
  4. Add avocado, scallions and almonds and toss with dressing
  5. Season with additional salt and pepper as desired.
