Ingredients

  • 4 ounces American cheese
  • 6 slices bacon, cut into small pieces, cooked, divided
  • ΒΌ cup shredded Monterey jack-Colby cheese blend
  • 4 large eggs
  • 2 tbsp milk, divided
  • 2 tbsp prepared pancake mix

Instructions

  1. Preheat griddle or skillet to 350F
  2. In a small pan over medium heat melt the American cheese with 1 tbsp of the milk, stirring
  3. Reduce the heat to a simmer while you prepare the eggs.In a medium bowl, combine the eggs, bacon pieces from 4 bacon slices, the pancake batter, and the remaining 1 tbsp milk
  4. Whisk vigorously until all is well blended
  5. Spray the griddle with nonstick spray and pour the omelette mixture over the griddle, using a spatula to maintain a large, rectangular shape
  6. Pour half the cheese sauce over the top of the eggs
  7. When they are done, they will look dry
  8. Roll the omelette into a tight, uniform roll and transfer to a plate
  9. Garnish with shredded cheese and remaining bacon pieces.
