Ingredients

  • 1 T sliced almonds
  • 1 avocado, sliced
  • 1/2 c edamame
  • 1/4 tsp flax seed
  • 2 T lime juice
  • 1/4 tsp nutritional yeast
  • 4 c spring mix with baby spinach

Instructions

  1. Peel and slice avocado
  2. Squeeze lime juice over cut avocado so prevent them from turning brown
  3. Microwave edamame until hot and soft
  4. For 2 dinner salads, layer half salad greens, avocado, edamame, nutritional yeast, flax seed and almonds in each salad bowl
  5. Top with 2 T salad dressing of your choice.
